the perfect cold weather meal.

This made enough for 4 big servings. Each serving has 39+ grams of protein and 15g of fiber.
Gather your ingredients
Olive oil
1 lb ground beef
1 can of corn (15 oz)
1 can of black beans (15 oz)
1 can of rotel tomatoes (15 oz)
1 red bell pepper
1 red onion
3 cups of broth (chicken, beef, or bone will do)
1 cup of heavy cream
Toppings:
shredded cheese (grate it yourself - thank me later)
chips
half an avocado (per serving - very important for fiber)
Let's cook
Add some olive oil and saute your onion in the pot.
Once onion is tender, add the ground meat to the pot.
Once your ground beef is cooked through, add your red bell pepper and some more olive oil and cook until tender.
Then add remaining ingredients (corn, beans, tomatoes, stock, and heavy cream) and cook on medium heat until everything is cooked through.
Salt and pepper to taste
Serve and top with some avocado and cheese and there you go.
